Gingery Ground Beef with Lime and Herbs
This recipe goes quickly once everything hits the pan so prep all of your ingredients beforehand! Great as a protein bowl or lettuce wraps.
Ingredients:
1 ½ lbs of BRB Ground Beef
Cooked rice and/or lettuce cups, for serving
3 inch piece of fresh ginger
6 garlic cloves
1 shallot
2 limes
1/8 cup soy sauce or tamari
1 1/2 tablespoons sriracha
1 tablespoon fish sauce
1 tablespoon olive oil or avocado oil
Kosher salt
½ cup thinly sliced cilantro or basil leaves
Directions:
If you are planning to have rice with this meal, get it going. If you are serving this as lettuce wraps, get your lettuce leaves ready now.
Peel the ginger and cut it into thin matchsticks; thinly slice the garlic.
Finely dice the shallot and put it in a small bowl. Finely grate the zest of 1 lime into the bowl, then add the juice of both limes. (You should have about ¼ to ½ cup of lime juice.) Add the soy sauce, sriracha, and the fish sauce and stir to combine.
Heat a large cast-iron or other heavy-bottomed skillet over high for 2 minutes. Add the oil and tilt to coat. Add the ground beef, season with salt and immediately use a wooden spoon or metal spatula to smash it against the pan, at once flattening the meat and breaking it into smaller pieces. Cook, undisturbed, until the underside is browned and the beef looks juicy on top.
Add the ginger and garlic. Toss to combine, and cook, stirring occasionally, until the ginger and garlic are golden and the beef is starting to crisp.
Add the lime mixture and cook, stirring, until the sauce has reduced to a light glaze, about 2-3 minutes. Turn off the heat and toss in the cilantro or basil.
Serve with rice and /or lettuce leaves for wrapping around the beef. Enjoy!
